Fall has a certain way of making you want to cozy up, get comfortable and make up a big bowl of something warm and filling for yourself. I enjoy the transition from refreshing summer entrees and fruits galore into pastas, soups and winter squash recipes. Today I’m going to share with you eight of my favorite unique recipes to get you through the summer season!
1. Caramelized Butternut Squash Quinoa Salad with Goat Cheese & Roasted Grapes
If there was a contest to see how many amazing ingredients you could fit into a recipe, this one would take the cake. Read through the list again and imagine the flavor combination bursting in your mouth. Now go try it out in your kitchen!
2. Turkey Chorizo Sliders
A little spicy and a punch of juicy flavor – these little sliders are PERFECT for football season. And of course….they’re adorable, too!
3. Freeze and Slow-Cook Soups – Lentil Sausage Soup
Who wouldn’t love the idea of taking a zip lock baggy out of the freezer, dropping it in the slow cooker, and coming home after work to a delicious, home cooked meal? I adore the crock pot and if you haven’t made its acquaintance yet – I encourage you to fall in love with it, too! Lentils keep you full for hours and the Kielbasa sausage in this soup is packed full of flavor!
4. Butternut Squash Lasagna
Lasagna is arguably one of the best forms of comfort food that exists – and this recipe takes it one step further into the autumn season by adding butternut squash to it! This recipe is deceptively easy and I have impressed many a guest with it!
5. Tomato Herb Soup
You better believe that I am including a tomato soup recipe on this list. It really wouldn’t be complete without one, now would it? And this one is tasty, flavorful, and rich and creamy.
6. Bakery Style Gingerbread Muffins
What is your favorite flavor of muffin? For the longest time, blueberry had my heart – but when I decided to try this recipe, my opinion swayed! Light and fluffy but packed full of flavor, try them for yourself and see what you decide!
7. Beefy Mexi-Cauliflower Rice
An unexpected twist but such a fun one…have you experimented with cauliflower? The possibilities go on and on. If you’re looking for a place to start, try this unique spin on Mexican rice. Don’t skimp on the avocado!
8. Sweet Potato Cauliflower Soup
Last, but not least…This soup has simple, straight-forward ingredients that make me smile. The broth is thick and creamy with a touch of sweetness, and the chunky vegetables give it a filling aspect. Perfect for fall!
